Bambu Sushi and Fusion, Sandy Bay, Roatan-Restaurant Review

What a wonderful meal we had at Bambu Sushi and Fusion in Sandy Bay. We opted to eat outside as the only table inside was a high top with those hard wooden seats, not conducive to enjoying what I anticipated was going to be a great meal. There is not much of a view outside as the restaurant sits on the road but there was a wonderful breeze and you could see the sunset through the trees. We started with some Asian style empanadas that were great with just a little hint of spiciness. I could have made a meal just of those . Our daughter and our neighbor, who came with us, also shared a spicy tuna sushi which they both raved about. My husband had a sweet and sour tempura shrimp in a pineapple which was beautifully presented but he said it was a little bit too sweet for him. It was a nice portion of shrimp, they were big and perfectly cooked. I had spicy pineapple rum glazed ribs over vegetables and rice which I enjoyed though I thought the ribs were a little on the tough side but it was served with a great rice and vegetable combination. I ended up taking half of it home. My daughter had orange chili spiced chicken which she loved but she also ended up taking half of it home as she was full from the tuna sushi.
